Keto Spicy Shrimp & Mashed Broccoli
Serves: 3

2 cups broccoli florets
1 tbsp butter, melted
1 clove garlic, minced
2 cups vegetable or chicken broth
2 oz cream cheese
2 tablespoon heavy cream
¼ cup parmesan cheese
1 lb. (450g) raw shrimp, peeled and deveined
1 tablespoon minced garlic, or dried garlic
1 teaspoon crushed chili pepper flakes
1 knob fresh ginger, grated (optional)
Salt and fresh cracked black pepper
1 tablespoon olive oil
Lemon wedges, for garnish

1.   Preheat oven to 375F
2.   Toss broccoli, butter and minced garlic together until broccoli is coated. Place in a baking dish and bake 20 min. until slightly roasted.
3.   While broccoli is roasting, marinade shrimp in olive oil, garlic, chili pepper flakes salt and pepper.
4.   Bring chicken broth to a boil. Add roasted broccoli to chicken broth and boil 5-8 min. until stems of broccoli have softened.
5.   Drain broccoli and transfer to a food processor. Add cream cheese, heavy cream and parmesan cheese and pulse until smooth.
6.   Heat olive oil in a large skillet on medium-high heat until hot. Add marinated shrimp to skillet and sear 2 minutes on each side.
7.   Serve shrimp over mashed broccoli squeeze lemon wedge over for added flavor.
