Keto Old Bay Shrimp Burrito Bowl

Old Bay Aioli
1/3 c. mayonnaise
1 1/2 tsp. Sriracha
1 tsp. fresh lime juice
2 tsp. Old Bay spices

Rice
1 small head cauliflower, riced
1 tbsp butter
1 tbsp lime juice
1 tsp paprika
1 tsp Old Bay spices
1/2 tsp salt
1/4 tsp cumin
2 tbsp Old Bay Aioli

Shrimp
1 tsp extra-virgin olive oil
1 tbsp butter
½ yellow onion, finely chopped
½ green bell pepper, diced
½ red bell pepper, diced
1 jalapeno pepper, diced
1 pound of small shrimp, peeled and cut, the tail removed
1 tsp Old Bay spices
1/4 tsp. cumin
1/4 tsp. paprika
2 tbsp Old Bay Aioli (see below)
Salt & Pepper to taste
2 cups Napa cabbage, shredded

1.   Prepare aioli by whisking all ingredients together in a small bowl.
2.   Place riced cauliflower in a microwave safe bowl and cover with a paper towel. Microwave on high for 3 minutes. Remove towel and fluff rice with a fork. Replace towel and microwave for 2 minutes. Remove towel and add butter and spices to rice, fluffing with a fork. Cover and set aside.
3.   Heat butter and oil in a large skillet over medium high heat. When melted, add onion and peppers and sauté 2-3 minutes until beginning to turn translucent. Add shrimp and sauté an additional 3-5 minutes until shrimp are nice and pink. Add spices and sauté 1-2 min. until fragrant.  Remove from heat.
4.   Place ½ cup shredded cabbage in a bowl. Top with ¼ of the prepared rice then ¼ of the prepared shrimp. Drizzle with remaining aioli.
