Keto Cabbage & Chicken
Servings: 4

3 tbsp olive oil
1 1/2 lb boneless chicken thighs, diced
1 medium cabbage, roughly chopped
1 medium carrot, shredded
1 tbsp paprika
2 tbsp. tomato paste
1/4 cup chicken stock
1 tbsp. hot sauce optional

1.   Heat oil in a  large skillet over medium-high heat. Add the chicken and fry 5-7 minutes until no longer pink.
2.   Stir in paprika and tomato paste until combined. Continue cooking for 5 minutes, stirring often. 
3.   Add the cabbage and carrots to the skillet.  Stir well then let simmer for 5-7 minutes until cabbage begins to brown. Stir a couple more times, allowing to simmer in between stirring.
4.   Add chicken stock, salt, and pepper. Stir everything together. Let simmer 5-10 minutes or until liquid has evaporated.
5.   Add 1 tablespoon of hot sauce, if desired. Garnish with fresh parsley.
