Keto Beef Short Ribs
Servings: 4

2 tbsp olive oil
3-4 lbs beef short ribs
1 large onion
2 carrots
4 celery stalks
3 cloves garlic
2 tbsp tomato paste
1 cup dark red wine
3 cups beef stock
1 tbsp oregano
2 tsp thyme
2 bay leaves

1.    Preheat oven to 350 F

2.    In a dutch oven, heat olive oil on medium high heat. Generously season ribs with salt and pepper on all sides. 

3.    In two batches, sear the ribs on each side for 3-5 minutes. Set aside.

4.    Add onion and cook for 8-10 min. Add celery and carrots and cook an additional 5-7 minutes.

5.    Add garlic, tomato paste, oregano and thyme. Stir until well combined and it begins to stick to the bottom of the pan.

6.    Deglaze with red wine and simmer until reduced by half. Add short ribs back to pan.

7.    Add beef stock to pan until ribs are mostly submerged. Spoon some of the vegetables and thickened broth over the top of the ribs.

8.    Add bay leaves, cover and transfer to the oven. Cook for 2-2 1/2 hours. Check after 2 hours to ensure liquid has not evaporated. Add more beef stock as necessary.

Serve over mashed or riced cauliflower.
