Seafood Chowder


Seafood Chowder
Servings: 6

½ cup butter
1 medium onion, diced
2 stalks celery, sliced
1 carrot, diced
4 cups chicken broth
1 tbsp dried basil
1 tbsp oregano
1 tbsp celery salt
½ tsp pepper
¼ tsp salt
1 tbsp paprika
1/2 pound cod
½ pound clams
½ pound crab meat
4 oz cream cheese
1 cup heavy cream

1.       In a large Dutch oven, melt the butter and then sauté the onions and celery over medium heat until softened.
2.       Add seasonings and cook for an additional minute until fragrant.
3.       Add chicken broth and bring to a simmer. Simmer 3-5 minutes to allow seasonings to soften and disperse flavor.
4.       Add seafood and return to a simmer. Cook until fish barely flakes, approximately 3-5 minutes.  
5.       In a medium bowl, add heavy cream to softened cream cheese a couple tablespoons at a time until completely incorporated. Add mixture to Dutch oven, stirring gently to combine.
6.       Bring chowder to a gentle simmer and allow to thicken and warm through.
