Ham & Cheddar Drop Biscuits

2 cups almond flour
1 cup cheddar cheese, shredded
½ cup cheddar cheese, diced
1 tsp baking powder
1/2 tsp salt
2 large eggs
1/3 cup sour cream
4 tbsp butter, melted
½ cup small diced ham

1.         Preheat oven to 350F and line baking sheet with parchment paper.
2.         In a medium bowl, mix all dried ingredients together.
3.         In a small bowl, whisk the eggs and sour cream until smooth and light yellow in color. Slowly add the melted while whisking to prevent the hot butter from “cooking” the egg. Whisk until well blended.
4.         Pour the wet mixture into the dry mixture and stir vigorously until well combined and starting to thicken. Fold in the diced ham and let mixture sit for 3-5 minutes until fairly dense and thickened.
5.         Scoop approximately ¼ cup of batter onto prepared baking sheet, keeping them mounded up as high as possible. Place 2” apart as they will flatten and spread slightly towards the end of the baking time.
6.         Bake 15-20 minutes until lightly browned on the bottom and top and there is a spring to the center of the biscuit.
