Cucumber Sandwich


Cucumber Sandwich
Servings: 2

1 cucumber
2 tbsp mayonnaise
1 tsp Dijon mustard
8 slices lunchmeat
2 slices cheddar cheese
Pinch dried dill
Pinch celery seed

1.   Slice cucumber lengthwise into 4 thin slices. Cut each slice in half.
2.   Spread mayonnaise evenly on all eight slices of cucumber.
3.   Spread Dijon mustard evenly on 4 of the slices of cucumber.
4.   Lay 1-2 slices of lunchmeat on each cucumber slice. Fold lunchmeat slices in half if larger than the cucumber slices.
5.   Cut cheese slices in half and place 1 half the 4 cucumber slices with Dijon.
6.   Put sandwiches together by stacking one cucumber slice without cheese on top of one with cheese, creating 4 cucumber sandwiches.
7.   Sprinkle each cucumber sandwich with dill and celery seed.
