Butter Beef
Servings: 6
3 lb beef
roast
1 tbsp olive oil
1 cup water
2 tbp ranch dressing seasoning mix
2 tbsp zesty
Italian seasoning mix
1 pint jar pepper
rings, drained with 1/4 cup of juice reserved
8 tbsp butter
¼ cup heavy whipping cream
1. Heat olive oil in a skillet over medium
high heat. Sear roast on all sides until browned. Place in bottom of pressure
cooker or instant pot.
2. Deglaze skillet
with water and pour over beef.
3. Add seasoning
mixes, pepper rings and juices on top of the beef roast. Place the stick of
butter on top of the roast.
4. Lock the lid of the
cooker and seal the valve. Manually set the time for 60 minute. For larger
roasts, it could take 90 minutes.
5. When the cooking is
complete allow pressure to release naturally to complete the cooking process.
6. Remove some of the
liquid and place in a skillet on high heat. Allow to boil until starting to
thicken. Add heavy cream, lower heat and continue simmering until desired thickness. Add back to cooker.
7. Shred or cut up the
beef with sheers.
8. Serve over pureed
or riced cauliflower.
