Texas Chili Con Carne
Serves: 6

2 lbs ground beef
1 tbsp olive oil
8 oz. organic tomato sauce
2 tsp beef bullion (optional)
1 jalapeño peppers, diced
½ cup red bell pepper, diced
½ cup green bell pepper, diced
3 tbsp chili powder
1 tbsp onion powder
2 tsp ground cumin
1 tsp garlic powder
½ tsp salt
½ tsp pepper
¼ tsp cayenne
¼ tsp oregano

1.    Heat olive oil in a Dutch oven or soup pot on medium heat. Add ground beef and cook until no longer pink. Add tomato sauce, bullion, jalapeño, bell peppers and enough water to cover meat. Cover pot and simmer, 20-30 minutes, stirring occasionally.
2.    Mix together remaining ingredients and divide in half. Add one portion of the spice mixture and continue to cook for 20-30 more minutes, adding water if needed.
3.    Add second portion of spice mixture. Continue cooking for another 30 minutes, adding water if needed.
4.    Using an immersion blender, pulse chili 2-3 times. This will thicken the chili and give the meat a nice texture.
