Spinach Artichoke Soup


Spinach Artichoke Soup
Servings: 4

2 tbsp butter
1 medium onion, diced
3 garlic cloves, minced
4 cups fresh spinach
1 tsp salt
1 tsp pepper
4 cups chicken broth
14 ounce can artichoke hearts, drained and chopped
1 cup heavy cream
8 oz cream cheese, softened
1 cup parmesan cheese, shredded

1.      In a large pot, melt butter over medium-high heat.
2.      Add onion and garlic, sauté for 5 minutes.
3.      Add spinach and sauté until soft and wilted, stirring often.
4.      Add chicken broth, artichoke hearts, salt and pepper. Simmer 10 minutes until gently simmering.
5.      Turn heat to low and add heavy cream and cream cheese. Bring to a gentle simmer and turn off heat.
6.      Stir in parmesan cheese.
7.      Season with additional salt and pepper to taste.

         Option: Add cooked diced chicken thighs for a hearty dinner to feed the entire family!
