Scalloped Ham Casserole


Scalloped Ham Casserole
Serves: 6

1 large head of cauliflower
1/4 cup butter
1 small onion, diced
2 cloves garlic, minced
1 cup heavy cream
8 oz cream cheese
½ tsp garlic powder
½ tsp onion powder
Salt & Pepper
2 cups extra sharp white cheddar, shredded
1/2 cup sour cream
1 lb fully cooked ham, cubed
3 oz pork rinds, ground
2 tbsp butter, melted

1.      Remove florets from head of cauliflower. Trim stems closely and break into bite sized pieces.
2.      Place cauliflower in a saucepan and cover with 1 inch of water. Bring to a boil then reduce heat and cover. Simmer for 5-10 minutes until tender.
3.      Melt butter in a skillet. Cook onions and garlic until softened and fragrant.
4.      Whisk in the heavy cream, cream cheese and seasonings.
5.      Bring to a simmer; cook and stir for 2 minutes or until thickened.
6.      Remove from the heat. Stir in the cheese and sour cream until melted.
7.      Drain cauliflower.
8.      In a large bowl, combine the cauliflower, ham and cheese sauce and toss to coat. Transfer to a baking dish.
9.      Mix ground pork rinds with melted butter and sprinkle evenly on casserole.
10.    Bake, uncovered, at 350° for 40-45 minutes or until heated through.
