Sausage & Spinach Casserole
5 Isernios Spicy Italian sausage
links
1 medium red bell pepper,
chopped
1 medium green bell pepper,
chopped
1 medium onion, cut in thin
wedges
1 cup of canned diced tomato
Salt and pepper to taste
1 cup Ricotta cheese
2 eggs
1/2 cup Parmesan cheese
2 cups Fresh spinach
3/4 cup mozzarella cheese,
shredded
1. Preheat oven to 375°F
2. Cook the sausage in a skillet until slightly browned on all
edges and nearly cooked through. Remove sausage from pan and slice into ½”
slices. Return to skillet.
3. Add vegetables and sauté until they begin to soften.
4. Add diced tomatoes and simmer until vegetables are cooked
through.
5. Season with salt and pepper.
6. In a large bowl whisk together the Ricotta cheese and eggs until
smooth.
7. Stir in Parmesan cheese and spinach.
8. Layer in casserole dish with meat sauce and spinach mixture
twice.
9. Top with mozzarella cheese.
10. Bake until heated through, approximately 25-30 minutes.
