Saucy Garlic Chicken
1½ lbs boneless
skinless chicken thighs
4 tbsp Parmesan cheese, grated
2 tsp salt
1 tsp garlic powder
½ tsp black pepper
3 tbsp olive oil
3 tbsp butter
1 small onion, finely chopped
1 head of garlic, 10-12 cloves
1¼ cup chicken broth
1¼ cup heavy cream
½ cup fresh Parmesan cheese
2 tbsp fresh parsley
1. Season the
chicken with salt and pepper.
2. Heat 2 tbsp
oil and 1 tbsp butter in a large skillet over medium-high heat.
3. Fry chicken
thighs until golden on each side and cooked through (about 4-5 minutes each
side). Remove from skillet and slice into strips. Set aside.
4. Reduce heat
to medium. Sauté the onion in the same
skillet until softened.
5. Smash 6 whole
cloves of garlic with the blunt edge of the back of a knife. Add the remaining
oil and butter to the pan. Sauté all garlic cloves (smashed and whole) until
fragrant, about 2-3 minutes. Add the broth to deglaze the pan. Scrape up any
browned bits and let simmer and reduce to half, about 5 minutes.
6. Reduce heat
to medium-low. Pour in the cream. Bring the sauce to a gentle simmer for about
2-3 minutes. Mix in the parmesan cheese and continue cooking gently for about
2-3 minutes until cheese melts. Season with salt and pepper to taste.
7. Add the
chicken back into the pan and let simmer for a further 2-3 minutes to thicken
the sauce.
8. Garnish with
parsley and a little black cracked pepper.
