Keto Gumbo
Serves: 8

2 lbs chicken thighs, boneless and skinless
1 lb beef sausage, cut into rounds
1 bell pepper, diced
1 onion, diced
2 celery stalks, sliced
4 tbsp garlic
6 ounces tomato paste
15 ounces diced tomatoes
1 tbsp Cajun seasoning
1 tsp each cayenne
1 thyme
½ tsp oregano
½ tsp pepper
4 cups chicken broth
1 lb shrimp, deveined, no tails

1.   Cut chicken thighs into 1-2” chunks. Different sizes will create more texture in your gumbo! Toss chicken into your slow cooker.
2.   Add all remaining ingredients, except shrimp, to your slow cooker.
3.   Stir and mix well.
4.   Cook on high for 3-4 hours or low for 7-8 hours.
5.   Add the shrimp 20 minutes before serving.
6.   Serve over riced cauliflower if desired or enjoy all by itself!
