Cream Cheese Danish
 Servings: 4

Dough
      1 1/4 cup 2% mozzarella, shredded
      6 tbsp. almond Flour
      3 tbsp. coconut flour
      4 tbsp. Swerve
      1/2 tsp baking powder
      1/2 tsp vanilla
      2 tbsp. butter, melted
      1 large egg
      Filling
      6 oz. cream cheese
      1 tsp lemon juice
      1/2 tsp vanilla extract
      1/4 cup sugar equivalent
      1 egg yolk
      Icing
      3 tbsp. powdered Swerve
      2 tbsp. heavy cream
      2 oz. cream cheese
      1/4 tsp vanilla extract

1.   Preheat oven to 400 degrees.
2.   Soften cream cheese and whisk together with lemon juice, vanilla, Swerve and egg yolk. Refrigerate until dough is ready.
3.   Mix flours and baking powder.  Set aside.
4.   Combine butter, vanilla and sweetener. Set aside.
5.   Melt mozzarella in the microwave for 30 seconds. Stir and microwave in 15 second intervals until completely melted. Add butter mixture, flour mixture and egg to melted cheese. Stir until batter is completely mixed using your hands or a spatula to press and fold the cheese and the batter together. Reheat for 10 seconds in the microwave. Continue to press and fold until the dough is smooth.
6.   Place dough on a piece of parchment and cover with another piece the same size. Roll dough into a 14”-16” square. Remove top parchment and cut large square into four equal squares with a pizza slicer or sharp knife.
7.   Fold all four corners of each small square into its center creating a smaller square. Rearrange on parchment 2-3” apart and place parchment on baking sheet pan.
8.   Spoon a generous amount of filling into the center of each danish.  Bake for 10 minutes, rotating after 5 minutes.
9.   Frosting: Soften cream cheese in the microwave. Add powdered sweetener, heavy cream and vanilla. Mix well with a whisk. Pipe or drizzle frosting onto each danish.
