"Corn" Tortilla
"Corn" Tortilla
1¼ cup almond flour
1½ tsp xanthan gum
1 tsp psyllium husk powder
½ tsp salt
¼ tsp cumin
¼ tsp garlic powder
1 egg
3 Tbsp. Water
Avocado oil
1. Combine the first six
ingredients in a food processor and blend until just combined.
2. Combine the egg and water
in a small bowl and beat well with a fork.
3. Turn the food processor on
to low and slowly pour the egg/water mixture into the processor. Mix until
completely combined and dough forms a firm ball. It may be slightly sticky.
4. Dump the dough onto a
piece of parchment paper and form it together into a ball.
5. Place another piece of
parchment paper over the top of the dough and roll into one large thin sheet of
dough about 1/4" thick.
6. Use a cookie/biscuit
cutter, small bowl or large cup to cut a 5-6" size circle. Place cut
circles between two pieces of parchment paper and roll just a bit more to thin
them out evenly and create 8” tortillas.
7. Heat a small skillet to
medium and brush oil onto the bottom of the pan with a basting brush.
8. Add one tortilla at a
time, brushing the skillet each time, and cook about 10-15 seconds total per
side.
9. Remove and place on a
paper towel or clean linen towel to stay warm.
