Coconut Lime Shrimp


Coconut Lime Shrimp
Serves: 3

1 tbsp coconut oil
1 lb. jumbo shrimp, peeled and deveined
Salt and black pepper
1 cup coconut milk
Juice of 1/2 lime
2 tbsp cilantro, chopped
1 tbsp. Sriracha

1.      Heat coconut oil in a large skillet over medium heat.
2.      Add shrimp and season with salt and pepper.
3.      Cook until barely cooked through and pink, 2 minutes per side.
4.      Add remaining ingredients to the skillet and stir to combine.
5.      Reduce heat to low and simmer, 5 minutes.
6.      Garnish with cilantro and serve.
