Broccoli Cheddar Soup


Broccoli Cheddar Soup
Serves: 8

2 tbsp butter, divided
1 small yellow onion, diced
1 clove garlic, minced
3 cups chicken broth
2 cups heavy cream
6 cups broccoli florets
2 large carrots, sliced into rounds
Salt & Pepper to taste
1/2 teaspoon paprika
1/2 teaspoon dry mustard powder
Pinch cayenne pepper
8 ounces extra-sharp cheddar cheese, shredded

1.   Sauté onion in 1 tablespoon butter, about 4 minutes.
2.   Add garlic and cook 30 seconds, stirring constantly. 
3.   Whisk in stock and heavy cream.
4.   Simmer 15 minutes until reduced and thickened some.
5.   Add broccoli, carrots and seasonings, stir to combine..
6.   Simmer 15 minutes until broccoli is tender, stirring occasionally.  
7.   Add cheese, stirring until cheese is melted and incorporated fully.
8.   Remove from heat and serve hot.
