Bacon Cheeseburger Soup

Bacon Cheeseburger Soup
Serves: 6

1 pound ground beef
1 small onion, chopped
1 carrot, shredded
3 celery stalks, diced
1 teaspoon dried basil
1 teaspoon dried parsley flakes
1 tablespoons butter, divided
3 cups chicken broth
4 cups cauliflower, bite sized pieces
4 oz cream cheese, softened
2 cups cheddar cheese, shredded
1 ½ cup heavy cream
1 teaspoon salt
½ teaspoon pepper
1 pound bacon, cooked and crumbled
¼ cup sour cream

1.    Brown the ground beef in a large saucepan or Dutch oven. Drain and set aside.
2.    In the same saucepan, add 1 T butter and onion, shredded carrots, parsley flakes, basil and celery. Sauté until tender.
3.    Add the broth, cauliflower and cooked ground beef, and bring to a boil.
4.    Reduce heat, cover and simmer 10-12 minutes or until cauliflower is tender.
5.    Stir in the cream cheese, cheddar cheese, heavy cream, salt and pepper.
6.    Cook and stir until cheese melts.
7.    Stir in the cooked and crumbled bacon.
8.    Remove from heat and blend in sour cream.
