Bacon Cheeseburger Casserole Pie
Serves: 6

Crust
2 cups almond flour
2 cup cheddar cheese, shredded
1 1/2 tsp baking powder
1/2 tsp salt
3 large eggs
1/2 cup sour cream
1/4 cup butter, melted
Topping
2 cups sharp cheddar, shredded
1 lb. bacon, diced
2 lbs. ground beef
Salt & Pepper to taste
1/3 cup sour cream
1/3 cup ketchup
2 tbsp. dill relish
1 cup sliced dill pickles
2 tbsp. red onion, finely diced

1.   Heat oven to 350°F. Grease a 9- x 13-inch glass baking dish.
2.   In a large bowl toss together cheese, almond flour, baking powder, and salt.
3.   In another bowl whisk together the eggs, sour cream and melted butter.
4.   Add the wet ingredients to the dry, stirring until well combined. Pour the batter into the baking dish, spreading evenly.
5.   Bake for 20-25 minutes, until the edges begin to brown.
6.   While bread is in the oven, cook bacon until crisp. Using a slotted spoon, place cooked bacon on a paper towel and set aside.
7.   In a separate skillet, cook ground beef until no longer pink, seasoning with salt and pepper half way during cooking. Drain and set aside.
8.   Mix together sour cream, ketchup and dill relish. Spread evenly over top of bread. Sprinkle with 1 cup of shredded cheese.
9.   Place cooked ground beef evenly on top of sauce. Sprinkle with remaining cheddar cheese and bacon. Place dill pickles evenly over the top and then sprinkle with red onion.
10. Return to oven until cheese has melted and casserole is heated through, approximately 20-30 minutes.
